Carole graduated from Saint Joseph’s University (Lebanon) in 2009 with a bachelor’s degree in Chemistry and went ahead to pursue her master’s degree in Industrial Technology and a second master’s degree in Business and Health Management from Université Denis Diederot (Paris). Having worked across renowned institutions within the UAE, like PwC, and Munich Re the thought of launching her very own mochi ice cream café struck Carole in 2016, during a holiday back home, in Beirut.
It was during her visit to Beirut that Carole tried the mochi ice creams for the first time ever at a Japanese restaurant, and instantly fell in love with everything about it – the flavour, the play of textures and the concept of transforming a traditional mochi cake into a unique dessert. It was after her delightful first encounter with the Japanese delicacy (and because of her love and passion for food) that she decided to launch her very own mochi ice cream café in the city, that would be the UAE’s first (and continues to be the only) local mochi ice cream manufacturers in the UAE.
